lemon thyme sugar cookies

½ c. butter, softened       
¾ c. sugar          
1 egg               
½ tsp. vanilla          
4 tsp. very finely chopped
fresh lemon thyme
1 ½ c. flour
½ tsp. baking powder
¼ tsp. baking soda
¼ tsp. salt

In a large bowl, using an electric mixer, cream together butter and sugar.  Beat in egg and vanilla.  In a small bowl mix together flour, baking powder baking soda and salt.  Stir into creamed mixture.  Stir in lemon thyme.  Divide dough in half; shape into two 7 – inch logs.  Wrap each in plastic wrap.  Refrigerate for one hour.   Cut logs into slices ¼ inch thick.  Place on greased baking sheets, bake in a 350° F over for 10-12 minutes or until slightly browned.  Let cool on racks; store in a covered container.
