description:  Clump-forming hardy perennial.  Clusters of purple globe-shaped flowers bloom all summer long.  Leaves are green, cylindrical, and hollow, and have a mild aroma and flavour similar to onion.

harvest:  Cut fresh leaves during the growing season.  Use fresh, ore preserve in herb butter.  Fresh flowers can also be used in early summer to flavour salads.

culinary notes:  Chives are especially good with potatoes and eggs.  Leaves are used to garnish and flavour soups and salads, and in soft cheeses, omelet’s, and sauces.  Individual flowers are added to salads.  An excellent culinary and indispensable herb.
