latin name: lauris nobilis

zone:  8-10
type: tender perennial
light: full sun
height: full grown tree – 26 ft. (8 m)

description:  A perennial evergreen tree grown in Mediterranean climates.  The pointed oval shaped leaves are  dark green and have a shiny upper surface.  Whey crushed, they give off a sweet aromatic scent.  Leaves held up to the light becomes translucent, showing off all its veins.  In our northern climate this herb is best planted in a container where it can be brought indoors during the winter months.

harvest:  Since this is a evergreen herb, the leaf can be picked for use fresh all year round.

culinary notes:  Bay leaves in cooking promote digestions, especially of meat.  You can use the leaves fresh or dried.   Dried leaves lose flavour after about a year.  Bay leaves are an ingredient in a bouquet garni.  Leaves are commonly added to sauces, soups, stews, and desserts.  A leaf in a jar of flour or rice will deter weevils.
